  • Cut off the ends of the zucchini, place it next to the blade and spin. It should only take 10 seconds to spiralize a zucchini.

  • Zucchini noodles are best when they are quickly pan-seared in a hot pan. No need to boil them. They will become mushy and watery.

  • I like to heat a pan over medium-high heat, add a little oil or butter, then toss the zucchini noodles in the oil or butter for just 2 minutes, flipping with tongs to sear.

How to Make 2 Ingredient Keto Pasta With Zucchini

  • Prepare the zucchini noodles by washing and trimming the ends of the zucchini. Using a spiralizer or a julienne peeler, create zucchini noodles. If you don't have a spiralizer, you can also use a sharp knife to julienne the zucchinis into thin strips resembling noodles carefully.

  • In a skillet, heat about 1 cup of Rao's Alfredo Sauce (or your preferred keto-friendly Alfredo sauce) over medium heat until it's warmed through. This takes about 3 minutes.

  • Once the zucchini noodles are spiralized, and the Alfredo sauce is heated through, add the zucchini noodles to the skillet.

  • Allow the zucchini noodles to cook in the sauce for 1-2 minutes, stirring occasionally. Be careful not to overcook them; you want them to be tender but still have a slight crunch.

  • Serve the zucchini noodles immediately!
