I have a quick and easy veggie taco recipe for you!

Ingredients

  • 3 of your favorite tortillas, I used these cassava flour tortillas
  • 1/3 cup plain full-fat greek yogurt, sub for non-dairy yogurt
  • 1/3 cup chickpeas, drained and rinsed
  • 1/4 cup red onion, sliced
  • 1/4 cup bell pepper, sliced

  3. Add the spinach and lemon juice and remove from heat. Allow the spinach to wilt.
  4. Smear a layer of plain greek yogurt evenly on each warm tortilla.
  5. Add the warm filling evenly on top of the greek yogurt.
  6. Add the sliced avocado to the filling.
  7. Sprinkle each with everything bagel seasoning.
  8. Enjoy!
