Trader Joe’s Lentil Bruschetta Flatbread
This is one of my all-time favorite quick dinners!
Remember when you used to walk into the Trader Joe’s grocery store and they had combos in the tasting section for you? Before the pandemic, that was one of my favorite parts of going into the store!
I loved the different combos the store employees would whip up with the simple Trader Joe’s ingredients. This lentil, bruschetta combo is one of my favorite ones. It calls for 6 simple ingredients, all from Trader Joe’s!
Why I Like This Lentil Bruschetta Flatbread Recipe
This Trader Joe’s Lentil Bruschetta Flatbread is prepared and on the table in just 15 minutes. You can make it in either an oven or an air fryer. Plus, there’s zero mess! You’ll be left with just a bowl to clean.
This flatbread recipe is meatless but packed with so much protein. Despite being vegetarian, it’s super flavorful. For those whose stomachs don’t mix well with gluten, have no fear. It can easily be made gluten-free! This Lentil Bruschetta Flatbread is so cheesy and gooey, it’ll tingle all of your tastebuds. I mean, it’s a pizza; who doesn’t love pizza? Now, let’s talk about the ingredients!
Lentil Bruschetta Flatbread Ingredients
Trader Joe’s Steamed Lentils
These steamed lentils are literally nowhere else to be found. I have searched every other grocery store, but I can’t find them! Thankfully, the refrigerated section of Trader Joe’s is always stocked with them.
Trader Joe’s steamed lentils can be eaten hot or cold; they taste delicious when they are cooked to perfection with a bit of seasoning. I love them on salads as a boost of protein, or in pasta with a delicious pasta sauce. Can you believe there’s 18g of protein in just 1 cup of steamed lentils?
Trader Joe’s Bruschetta
Bruschetta is basically just tomatoes, oil, garlic, onion, vinegar, salt, basil, and spices. It goes great on pasta, with toasted bread, over rice, or even with some crispy chips!
There are 2 different kinds of Bruschetta at Trader Joe’s. One is in the refrigerated section, right by the lentils. The other one is in the pasta sauce section in the middle of the store. I prefer the fresh refrigerated one, but if that’s unavailable (as it is from time to time), then go for the jarred sauce!
Trader Joe’s Flour Tortillas
I love getting Trader Joe’s homemade, whole wheat-style tortillas. They taste delicious and are made with whole wheat flour. You can also use pita bread which is also thick and delicious. I prefer the thicker style tortillas or pitas because they are a beautiful vessel for heavier lentils and juicy bruschetta.
If you only have a thin-style tortilla, that will work too. You’ll just want to ensure you don’t fill the tortilla up too much with the filling as it can make it soggy.
Trader Joe’s Shredded Cheese
Trader Joe’s has a fantastic cheese section, I always have a blast looking through all of the cheeses. Pick one of your favorite shredded cheeses for the flatbread. There are some pre-shredded cheeses that work really well for this recipe.
If you want to go with a classic, try their shredded mozzarella. It’s savory, smooth, and melts really well leaving your pizza gooey. If you want something a bit aged, tangy, and super satisfying, go for Trader Joe’s Unexpected Cheddar Cheese.
Oregano
Oregano is often referred to as the “pizza herb”. To be honest, the bruschetta has oregano, but I love to level up with an extra dash of oregano. You can use fresh or dried. I always have dried oregano on hand because it’s subtle and doesn’t overpower dishes. It’s the perfect flatbread spice.
Fresh Basil
Fresh basil is probably the biggest steal at Trader Joe’s. You only need a few leaves (2-4 leaves) for the finishing touch on this dish. I love to plant a basil leaf on my patio and pick a few leaves for nights I am enjoying something Italian!
To cut the basil, just place the leaves on top of each other, roll them into a cocoon, then slice thinly. The basil is perfect as a garnish on the pizza right before you’re serving it.
What You’ll Need to Make the Flatbread
Mixing Bowl
If you enjoy cooking, you need a good set of mixing bowls in your life. I bought these glass bowls a year ago, and I literally use them every single day. They have all different sizes so it is perfect for large salads, personal salads, bowls, serving, mixing, baking, etc. Grab your set here!
Oven or Air Fryer
If you’re cooking for multiple people, then you can use an oven for this recipe! You’ll need a good pizza pan or even just a sheet pan to place your flatbreads on.
On the contrary, if you’re making a personal flatbread, you can reach for an air fryer. I recommend this COSORI air fryer I just got. It fits one pizza! If you’re in the market for a simple air fryer, try this one!
How to Make My Trader Joe’s Lentil Bruschetta Flatbread
Start by preheating your oven or air fryer to 400 degrees Fahrenheit.
Grab your large mixing bowl and combine the steamed lentils, bruschetta, and oregano. Add about a quarter to half a cup of this mixture to each tortilla. Spread it out evenly, being careful not to get too close to the edges or put it on too thick. We still want those to get crispy, delicious edges.
Now, it’s time for the best part! Sprinkle your flatbread with the shredded cheese of your choice, using as much or as little as you please. Place the cheesy flatbread on a baking sheet and let it bake for 12-15 minutes. If you’re using an air fryer, be sure to check on it after 10 minutes to see if the cheese is nice and golden.
Finish off your pizza with a healthy sprinkle of freshly chopped basil. Finally, cut your flatbread into slices and enjoy! I can’t wait for you to experience it. If you want a video version, check it out here.

Trader Joe's Lentil Bruschetta Flatbread
Ingredients
- 1 pack Trader Joe's steamed lentils
- 1 container of Trader Joe's bruschetta (12-14 oz)
- 2 teaspoons oregano, dried or fresh
- 4 pieces of Trader Joe's handmade whole wheat flatbread
- 1 cup grated mozzarella cheese
- Fresh basil leaves, for garnish
Instructions
- Preheat the oven to 400F or if you are just making one pizza, preheat the air fryer to 400F.
- Into a large bowl, mix the steamed lentils, bruschetta and oregano together.
- Depending on the size of your tortilla, add about 1/4 cup - 1/2 cup of the mixture on each tortilla. Spread it evenly, careful not to spread it too far onto the edges. You want to make sure it's not on too thick either as it won't allow the flatbread to crisp up.
- Sprinkle the flatbread with the shredded cheese, as much or as little as you want. Again, careful not to overfill the flatbread.
- Place the flatbreads on a baking sheet and bake for about 12-15 minutes. Keep an eye on them to make sure the cheese is golden brown.
- If you are using an air fryer, check it after 10 minutes to see how to cheese is melting.
- Finish with a sprinkle of fresh chopped basil on top.
- Cut with a pizza cutter and enjoy warm!
Notes
Storage: If there is additional filling leftover, you can store this in the fridge for up to 4 days.
Extra Filling: Feel free to reuse the filling on pizza (again), or you can toss into your favorite pasta sauce, on a bed of arugula, over some brown rice or even use it as a topping for some crispy toasted bread.
